I worked for a Deli for 7 years in high school / college. We would cut open packages and drain fluids in the sink. I recall seasoned roast beef in particular running into the sink to make it black as pitch. We would toss knives into this goop until we were ready to drain the sink and wash stuff. I would reach right down into the middle of that blindly and retrieve knives before pulling the drain. Not once did I ever cut myself. I got cut all the time on things that should not cut me -- the edge of a counter, a door, a handtruck... never a knife. Weird.
